I think I was trying to channel olive garden or something by making this chicken and mushrooms in a creamy parmesan sauce over mashed potatoes. I feel like they have a dish like this on their menu?! Not that I know or anything. We will make again when we need a quick and easy meal.

  1. Cook chicken, don’t worry about any seasoning, will be taking all of the meat off the bones. Use any kind of chicken you have quarter thighs, chicken breast would be the easiest, thighs.
